Nicosia's Sicilian Sasuage


Sicilian sausage, our original first product in 1983, is produced with quality pork chopped and marinated with hearty Cabernet Sauvignon wine, then blended with fresh chopped garlic and a variety of whole, cracked and crushed spices. All spicing is weighed to gram accuracy as with all of our sausage products so as to maintain quality and consistency of flavor. This Sausage is then stuffed into all natural casings. This sausage is available in fresh  links and bulk chubs.
 
This wonderfully flavorful sausage serves well with any pasta dish or use as a base for lasagna, meatloaf, meatballs, soups, a Bolognese sauce, as a pizza topping or use in omelets or with other egg dishes. Sandwiches are wonderful with grilled sausage on rolls with onions and peppers or Marinara sauce and melted Mozzarella. The possibilities are as endless as your imagination.

BRATWURST
Traditional Old German Style Sausage

 Much like many of our unique sausages this Bratwurst has been developed through the request and assistance of restaurateurs seeking old style Bratwurst. This highly flavored sausage is produced with quality pork chopped, then blended with honey, imported German brown mustard, crushed herbs and a variety of cracked and ground spices and is then stuffed into all natural casings. We have been told by our German friends, some retired sausage masters that spicing in Bratwurst in some areas were primarily marjoram and others mace and nutmeg, however marjoram seemed to be the favorite. We have strived to achieve a delicate blend of both with marjoram slightly more predominant. Some reference was given to powdered mustard and sugar, so we decided on a minimum amount of honey, imported brown German mustard and several other spices as flavorful additions. This flavorful sausage is a medium coarse chopped product instead of an emulsified type giving it a more traditional texture.

Contains no Nitrites, MSG or Artificial Flavorings. This Old world style Bratwurst sausage is often served with sauerkraut, red cabbage, hot red beet salad or German style potatoes in any combination one might enjoy. Naturally, just grilled and served on rolls with mustard or other condiments is great.

 LINGUICA

 Old Style Portuguese Sausage

  This product has been developed through the request and assistance of our many Portuguese friends in the community. This highly flavored sausage is produced with quality pork chopped and marinated with Red Wine vinegar hearty Cabernet Sauvignon wine, then blended with fresh garlic and a variety of cracked, ground and crushed spices. We have been advised by our Portuguese friends that Linguica should somewhat break up when cooked, similar to chorizo, however the similarities end there. The flavors of red wine vinegar, fresh garlic and spices should be prominent. The elimination of non fat dry milk accomplishes this and enhances all of the other flavors. Our initial presentation to the Portuguese community seemed to be slightly heavy with vinegar, so we replaced a portion of vinegar with Cabernet Sauvignon to soften and maintain a great balance in flavor. Contains no Non Fat Dry Milk, Nitrites, MSG, Sugar or Artificial Flavorings. This flavorful Old world style sausage is wonderful used in omelets or with other egg dishes, or as a pizza topping. Linguica can also be used as a base to soups, chili, bean dishes etc. Sandwiches are intensely flavorful grilled and served on rolls with a variety of condiments.

This amazing sausage is the culmination of 18 months of testing, tasting and modifying the many wonderful aromatic ingredients until achieving a spectaluar flavor without any particular spice or ingredient becoming overwhelming. This is accomplised through the delicate weighing of all ingredients to within a thenth of a gram, thus insuring consistency of flavor and quality and resulting in what we believe to be one of the most unique and flavorful products to be introduced in many years.
