Sicilian sausage, our original first product in 1983, is produced with quality pork chopped and marinated with hearty Cabernet Sauvignon wine, then blended with fresh chopped garlic and a variety of whole, cracked and crushed spices. All spicing is weighed to gram accuracy as with all of our sausage products so as to maintain quality and consistency of flavor. This Sausage is then stuffed into all natural casings which have been marinated in a pineapple juice blend for increased browning when grilled and increased flavor and tenderness. This sausage is available in fresh mild or hot links, chubs and or a fully cooked version. This wonderfully flavorful sausage serves well with any pasta dish or use as a base for lasagna, meatloaf, meatballs, soups, a Bolognese sauce, as a pizza topping or use in omelets or with other egg dishes. Sandwiches are wonderful with grilled sausage on rolls with onions and peppers or Marinara sauce and melted Mozzarella. The possibilities are as endless as your imagination.
Old Style Portugese Linguica
This product has been developed through the request and assistance of our many Portuguese friends in the San Leandro community. This highly flavored sausage is produced with quality pork chopped and marinated with Red Wine vinegar hearty Cabernet Sauvignon wine, then blended with fresh chopped garlic and a variety of cracked, ground and crushed spices. This product is then smoked and fully cooked for your convenience and safety. This sausage may also be produced in fresh links or bulk chubs. We have been advised by our Portuguese friends that Linguica should somewhat break up when cooked, similar to chorizo, however the similarities end there. The flavors of red wine vinegar, fresh garlic and spices should be prominent. The elimination of non fat dry milk accomplishes this and enhances all of the other flavors. Our initial presentation to the Portuguese community seemed to be slightly heavy with vinegar, so we replaced a portion of vinegar with Cabernet Sauvignon to soften and maintain a great balance in flavor. All Natural Bratwurst
Much like our Linguica this product has been developed through the request and assistance of restaurateurs and retired German sausage masters seeking old style Bratwurst. This highly flavored sausage is produced with quality pork chopped, then blended with honey, imported German brown mustard, crushed herbs and a variety of cracked and ground spices. This product is then stuffed into all natural casings which have been marinated in a pineapple juice blend for increased browning when grilled and increased flavor and tenderness. Available in fresh links, chubs or smoked and fully cooked

All Natural Kielbasa
A fine all pork Polish style sausage with fresh chopped onions, fresh garlic, cracked and crushed spices and seasoned with traditional ground herbs a touch of caraway and mustard. This sausage can be made available in fresh or fully cooked version for added convenience. Contains no Non Fat Dry Milk, Nitrites, MSG, BHA, BHT or Artificial Flavorings
